BRUNCH TIME: Strawberry & Goat Cheese Tarts - A Bridal Shower Treat


It was a special brunch event, my good friend Lily's Bridal Shower. She actually found this amazing recipe, I was only the one who prepared these strawberry goat cheese tarts. It doesn't take long to make them, and they are delicious. The right little treat for a very fun and special day :)

Ingredients (for 18 pieces):

  •  1 package Puff Pastry (package contains 2 sheets)
  • 1/4 cup Strawberry jam
  • 1/2 cup Goat cheese
  • 1 Egg (beaten)
    For the Glaze:
  • 1/4 cup Strawberries (finely chopped)
  • 2 cups Confectioners Sugar
  • 2 Tbsp Water

Preparation:

 Heat oven at 435 degree.
  1. Thaw the Puff Pastry and use immediatelz. If you leave it out too long, it will dry out. Flour your working space, unfold both Puff Pastry sheets and cut each into 9 squares (cut twice horizontal and vertical).
  2. In the end, you will flip over each square and from triangles, so make sure that you add the filling ONLY to one triangle side of the square. Leave out a 1/2 inch border. Spread 1 teaspoon goat cheese and 1 teaspoon jam on top of it on one triangle half of the square. Now, use the egg wash and brush the borders of the triangle half you filled. Poke the other triangle half with a folk. Flip the empty triangle half over the filled one and press the edges closed. Use the tines of a fork to press edges to seal.
  3. Bake in pre-heated oven at 425 degrees for 10 minutes, till puffed and golden brown. Take them out and let them cool down completely.
  4. Prepare the glazing by mixing the sugar, strawberries and water. With a spoon, drip one tablespoon of glazing on top of completely cooled tart.
