My Mom's Spaghetti Bolognese - Simple & Classy


You can go all fancy with your Spaghetti Bolognese recipe, add some red wine to the sauce, some fresh herbs such as thyme, rosemary or oregano, a few bay leaves, some fresh tomatoes and other vegetables such as bell pepper and carrots. This will for sure taste delicious. I have prepared those scrumptious Bolognese recipes myself.

However, this is my Mom's recipe. I call it simple & classy as she only uses the basics - gound beef, garlic, tomato paste/puree, a bit of spicy harissa, salt, pepper - that's it. No chunks of tomatoes, only paste and purée. She sometimes makes her own tomato purée with tomatoes from her garden. I know, for us cooks out there it will be difficult to withstand the temptation to add more, but let me tell you, if you try this simple Bolognese, you won't forget it. Here, the ground beef is the star in a delicious oily tomato sauce. Its simple earthy flavors makes it stand out and be special. 

Ingredients:

  • 1 l water
  • 2 Tbsp salt
  • 400g spaghetti

  • 1 Tbsp oil
  • 400g ground beef
  • 3-4 cloves garlic - minced
  • 1 chili - sliced
  • 1 Tbsp salt
  • 1 tsp pepper 
  • 1 tsp cayenne pepper
  • 5 Tbsp tomato paste
  • 2 Tbsp harissa (spicy paprika paste)
  • 1 cup water
  • 3-4 Tbps tomato purée (or tomato sauce with diced tomato pieces)

  • Optional: 1-2 tomatoes (chopped), 1/2 carrot (finely diced), 1 Tbsp bell pepper (finely diced), 1/2 Tbsp oregano or parsley, 1 Tbsp parmesan cheese

Preparation:

  1. Bring the water to a boil, add salt, add the spaghetti and cook for 8-10 minutes (depending on how al dente you like it).
  2. In another pot, heat up the oil. Add the ground beef and fry for 1-2 minutes. Add the minced garlic, chili, salt, pepper, cayenne pepper. Stir well and fry till ground beef is brown for about 10 minutes.
  3. Now, add the tomato paste and harissa, mix, fry for another 3 minutes. If you want a few more ingredients such as diced carrot, bell pepper and oregano, add them now. 
  4. In the end, add tomato purée and water, mix and bring to a boil. Cook for another 5 minutes till the sauce thickens a little.
  5. Serve with a green salad and sprinkle with parmesan and/or parsley if you like.
