I am on a roll with my porridge recipes... Here is another one, looks really nice as it is layered in a glass. Also, with the additional light and creamy yoghurt and the crunchy nuts and granola it had a delicious consistency. You can find the original recipe from N'oats
here, I again made a few small changes, using a few ingredients that I already had at home like the granola chunks :)
Ingredients:
- 60g (6 tbsps) N'Oats "Poppyseed-Vanilla Porridge"
- 200 ml milk
- 3 tbsps yoghurt (plain)
- 1 tbsp honey
- 2 tbsps nut-mix
- a few granola crisps
- 1 tbsp almond flakes
Preparation:
- Porridge layer: Stir the oats into the milk, bring to a boil, reduce heat and cook for 3 minutes. Keep stirring.
- Yoghurt layer: Mix the yoghurt with the honey to sweeten it.
- Nut layer. Blend the nut mix in an electrical blender, only pulse it for a a few seconds until crumbly. You still want some chunks in there. In a frying pan, roast the almond flakes. As soon as the pan is warm, it only takes a few seconds, so be watchful. You only want them slightly brown.
- Now, layer everything. Use a nice glass. Start with the porridge layer, fill up half of the glass. Then add the yoghurt till almost to the top. Sprinkle the nut mix on top and crumple a few extra pieces of granola on top. I had a very nice granola with chocolate chips that fit but you can use anything that you like. At last, add the almond flakes.
